Cannabis Pumpkin Gingerbread

We could give you a recipe on how to infuse regular bread with cannabis. But for the holidays, why not spice it up with some pumpkin gingerbread infused with cannabis! Speaking of spices, this gingerbread includes all of the right Autumn spices for the season. This warm bread will surely keep you cozy on a cold day!

Ingredients

This recipe will yield two bread loaves that are infused with cannabis. Don’t forget to mention that if you serve them out to guests!

Here’s what you will need to make these bread loaves:

  • 1 cup of cannabis coconut oil
  • 3 1/2 cups of all-purpose flour (unbleached)
  • 2 teaspoons of baking soda
  • 3 cups of sugar
  • 1 1/2 teaspoons of salt
  • 1 teaspoon of baking powder
  • 2 teaspoons of ground ginger
  • 2 teaspoons of ground cinnamon
  • 15 oz. can of pureed pumpkin
  • 1/2 teaspoon of ground nutmeg
  • 2/3 cup of water
  • 2 eggs
  • 1 teaspoon of pure vanilla extract
  • 2 tablespoons of applesauce
  • non-stick cooking spray
  • 2 bread loaf pans (1 also works, only takes more time)

Instructions

Step 1: Prepare

Start off by preheating your oven to 350 degrees F (176 C). While the oven preheats, prepare the bread loaf pans by spraying them with cooking spray. If you are doing this with only one bread loaf pan, simply respray the first pan after making the first loaf. Next, pour the coconut canna oil into a small saucepan and melt it over low heat until it is completely liquified.

Step 2: Mix

Grab a large bowl and toss in the eggs, applesauce, sugar, water, and vanilla extract. Mix them up completely until well combined. Then, pour in the melted canna coconut oil and mix that in as well. Once that is mixed, toss in the ginger, cinnamon, nutmeg, and pureed pumpkin. Mix again until combined.

Step 3: Combine

Take a separate small bowl and combine in the baking powder, baking soda, flour, and salt. Mix them well together. Use a fork for mixing. Now, slowly add in this dry mix to the wet mix in the larger bowl. Make sure to mix the batter well after adding in each portion of dry mix. Add in these portions until all of the dry mix has been added.

Step 4: Pour

Dividing the batter in half as best as you can, pour the combined mix onto each prepped bread loaf pan. Once the batter has been poured, gently tap and wiggle the pans to allow any air bubbles to come to the surface. This will prevent any air bubbles from creating large holes in the middle of the bread loaves while baking.

Step 5: Bake

Now place the bread loaf pans into your preheated oven and allow them to cook for about one hour. They will be done when you can stick a toothpick in the center of the bread and it comes out clean. Rotate the loaves halfway through cooking to ensure even baking. Once the loaves are done, remove them from the oven and leave them in their pans for 10 minutes to cool.

Your cannabis pumpkin gingerbread is now complete! To keep the bread moist, store it by wrapping it in tin foil. The bread will stay good for up to a week. Hope you enjoy! Thanks for reading!
